The Wild West of Food Chemicals

Did you know there are over 40,000 chemicals in our food and water? And out of those, only about 200 are truly understood and regulated by the EPA and FDA. That means the vast majority of chemicals in our food are essentially unregulated, leaving us vulnerable to potential harm.

How does this happen?

  • The Toxic Substances Control Act of 1976: This act, unfortunately, allows companies to introduce new chemicals into our food without rigorous testing. They simply tell the FDA it’s safe, and the FDA often takes their word for it.
  • Company-Led Testing: Unlike the pharmaceutical industry, where drug approval is a lengthy process with extensive studies, the FDA relies on companies to do their own testing on food chemicals. This creates a huge conflict of interest, as companies are motivated to find their products safe, even if they aren’t.

A Real-Life Example: Teflon

Teflon, the non-stick coating found on many pans, was introduced without proper testing and later found to be harmful. It’s now banned because it’s been linked to cancer and birth defects.

This is just one example that shows how the current system fails to protect consumers.

How “Safe” Levels Are Determined (and Why They’re Flawed)

The FDA uses a disturbing method to determine “safe” levels of chemicals in our food:

  • Animal Testing (on Rats): They expose rats to increasing doses of a chemical until the rat starts showing negative effects.
  • Safety Factor: They then multiply that dose by a “safety factor” (usually 300) to account for differences between rats and humans. This arbitrary number is supposed to ensure the chemical is safe for humans.

Problems with This Approach:

  • Ignores Long-Term Effects: This testing only looks at short-term effects. Many chemicals take years to manifest their full impact. A good example is PFAS, the “forever chemical,” which can accumulate in our bodies over time and lead to various health issues.
  • Doesn’t Account for Subjective Experiences: Observing a rat’s behavior doesn’t reveal how it feels internally. Humans experience things like anxiety and depression, which are difficult to measure in animals.
  • Ignores Bioaccumulation: This testing doesn’t consider how chemicals build up in our bodies over time. Continued exposure, even to small amounts, can have cumulative effects.
  • Ignores Combination Effects: The FDA tests chemicals in isolation, but we are exposed to thousands of chemicals simultaneously. No one knows the combined effects of these chemical cocktails on our health.

We Are the Experiment

The lack of proper regulation means we’re essentially participating in a giant experiment. The rising rates of obesity, anxiety, depression, and chronic diseases are a testament to this.


A Better Way: The EU Model

The EU takes a much more cautious approach, known as the “Do No Harm” approach. They assume a new chemical is harmful until proven otherwise. This has resulted in far fewer chemicals allowed in their food and products compared to the US.

What You Can Do

  • Prioritize Real, Whole Foods: This is the best way to minimize your exposure to harmful chemicals.
  • Choose Organic: Opt for organic produce and products whenever possible.
  • Read Labels Carefully: Be aware of common food additives and chemicals.
  • Support Brands with Transparency: Look for companies that are open about their ingredients and sourcing practices.

Remember, knowledge is power. By understanding how the system works, you can make informed choices to protect your health and the health of your family.
